No-Trouble Truffles

*~*~*~*~*~*~*~*~*~*

Definitely no trouble to make up a batch of these rich truffles.
A wonderful treat to serve up or to give as gifts...


Ingredients:

1 lb. Dark chocolate
1-1/2 C. heavy cream, heated to boiling point
Cocoa Powder

Instructions:

Using a food processor or blender, process chocolate until chopped into very fine bits.
Pour hot cream into food processor or blender as the motor
continues to run until mixture is very smooth. Refrigerate until firm.
Remove from refrigerator; using a teaspoon or melon-baller,
scoop out balls of chocolate mixture. Dust your hands with cocoa powder
and roll each truffle into a ball and then into a bowl full of cocoa powder,
making sure each truffle is well coated.
Place on a cookie sheet covered with waxed paper and then into refrigerator.

Option 1: after adding the hot cream to blender, add a tsp of cognac, rum or a liqueur such as Grand Marnier.

Option 2: instead of cocoa powder, roll each truffle in chocolate sprinkles
