Crunchy Nut Brittles and Jumbles

Microwave Crunchy Nut Brittle
*~*~*~*~*~*~*~*~*~*
Love nut brittles? Well, this is an easy one to do - just use your microwave!
Ingredients:
1 c. white sugar
1/2 c. corn syrup
dash of salt
1 to 1-1/2 c. peanuts
1 T margarine or butter
1-1/2 tsp baking soda
1 tsp vanilla

Instructions:
Grease baking sheet heavily.
Combine sugar, corn syrup and salt in a 3-quart bowl; stir in peanuts.
Microwave on high (100%), until light brown, for approximately 8 minutes, stirring twice.
Add margarine, baking soda and vanilla, stirring until foamy.
Quickly spread on greased baking sheet, spreading thin.
Put baking sheet in freezer to cool quickly.
After the candy has cooled completely, break into pieces.
Option 1 - substituting ½ cup of molasses for the corn syrup will make a nice, dark peanut brittle.
Option 2 – substitute almonds, cashews, pistachios or walnuts for the peanuts
