Marvelous Meringues and Macaroons

Basic Meringue Kisses
*~*~*~*~*~*~*~*~*~*
Make up a batch of these melt-in-your-mouth meringue kisses. A wonderful treat to serve up or to give as gifts...
Ingredients:
2 egg whites (make sure they contain none of the yolk)
6 T. granulated white sugar
1 tsp vanilla
2 T. granulated white sugar

Instructions:
Cover a cookie sheet with baker’s parchment paper or heavy brown paper.
Beat egg whites until very stiff and dry.
Very gradually add the 6 T. sugar, one T. at a time while continuing to beat the meringue.
Add vanilla and then fold in, very gently and carefully, the remaining 2 T. of sugar.
Arrange by spoonfuls onto cookie sheet or use a pastry bag to shape.
Bake at 250 deg. F for approximately 50 minutes or until meringues are well baked and dry.
The oven must be at a temperature low enough for the meringues to brown only slightly.
